AIP Herb Chicken, Sweet Potato Slices with Golden Beet Ketchup & Cranberry/Apple Relish

Prep & cook time 90 minutes

Cranberry Relish


12 oz fresh cranberries

2 medium granny smith apples cored and cut into chunks

2 stalks celery

1 cup concentrated "unsweetened" tart cherry juice

3 tbsp. honey (optional)

1 packet unflavored gelatin - wait until you need to mix it in as it will gel before you need it

Place all ingredients except gelatin in food processor - it should be the texture of a relish

Place relish in a bowl add in gelatin and refrigerate for 1 hour

AIP Herb Chicken


2 chicken breasts or 3 thighs

1 tbsp avocado oil

1 tsp herbs de Province

1 tsp smoked applewood salt

1 tsp garlic powder

Preheat oven or use my favorite the air fryer, mine is a Power Airfryer - love it!

Coat chicken in avocado oil

Apply a seasonings place in oven for 30 minutes or until chicken reads 160 F using meat thermometer

Sweet Potato Slices


2 medium sweet potatoes

1 tsp olive oil or avocado oil

Sea Salt

Golden Beet Ketchup - The Beet Lady

Slice sweet potatoes into 1/4inch slices

Coat with oil of choice & sea salt

Place on sheet pan and bake until golden brown or place in air fryer until golden brown

Serve with Golden Beet Ketchup!
