It's Fall & Pumpkin Mania


Well fall is here and Pumpkin mania is on! This week I purchased a large pumpkin so my favorite go to on a fall day is soup so pumpkin soup it is!


This is a quick and easy recipe.


Ingredients:

Organic Pumpkin - packaged is ok, but fresh is always better!

If fresh I roast mine with spices first.


If Roasting:

First deseed the pumpkin and quarter.

Then paste with either olive oil or grassfed ghee

Sprinkle 1/4 tsp ceylon cinnamon, 1/8 tsp turmeric, 1/4 province de herb, 1/4 garlic

Roast until pumpkin is mushy - 15 minutes in my airfryer

Next take the pumpkin from the shell and puree add to a small pot.

If Using A Packaged Organic Pumpkin:

In a small pot add the following:

Add either tsp olive oil or grassfed ghee

Add 1/4 tsp ceylon cinnamon, 1/8 tsp turmeric, 1/4 province de herb, 1/4 garlic

Heat until hot over low to medium heat.



In either case once the soup is warm add 1/2 cup coconut cream or coconut milk to make the soup creamy! If you can afford the calories I add 2 tablespoons of real ample syrup!

Next pour yourself a mug of warm pumpkin soup, take a walk outside and enjoy the fall!
