Mama Mia - AIP No Tomato sauces & spaghetti squash

Missing a good fill your belly Italian meal? Well who said sauce had to be tomato based! I tried these 2 sauces and I love them. Neither sauce contains tomato and if you need the pasta try a vegetable and healthy version using spaghetti squash!



The Beet Lady Marinara sauce is awesome and with beets you can't go wrong! The Beet Lady uses Love, Beets, Carrots, Onions, Garlic, Vegetable Stock, Wine Vinegar, Coconut Oil, Seasoning, Bay Leaves, Sea Salt.


The KC Natural No Tomato Sauce is a of base of carrots, tart cherries, beets, and sea salt combine to re-create the tomato flavor.


Pair either of these sauces with Spaghetti Squash or your favorite pasta substitute and you got an Italian meal that is healthy and delicious!

How to Cook Perfect Spaghetti Squash

The simplest and EASIEST way to cook spaghetti squash. And it’s such a healthy substitute to pasta – low in calories and fat!

YIELD: 4 SERVINGS

PREP TIME: 5 MINUTES

COOK TIME: 45 MINUTES

TOTAL TIME: 50 MINUTES

INGREDIENTS:

1 (2-3 pounds) spaghetti squash

2 tablespoons olive oil

Kosher salt and freshly ground black pepper, to taste

DIRECTIONS:

Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

Cut the squash in half lengthwise from stem to tail and scrape out the seeds.* Drizzle with olive oil and season with salt and pepper, to taste.

Place squash, cut-side down, onto the prepared baking dish. Place into oven and roast until tender, about 35-45 minutes.

Remove from oven and let rest until cool enough to handle.

Using a fork, scrape the flesh to create long strands.

*The squash can be placed in the microwave for 2-5 minutes for easier slicing.
