Mug Bread for AIP & Keto

Please note this is for those who have reintroduced almond and egg successfully in AIP.



I think in both AIP & Keto we still get the urge for bread. Who doesn't love bread! So when you get an urge what are we to do. There are many versions of this mug bread and I thought I share my favorite one. Feel free to experiment there is so much you can do.


You will need a microwave or airfryer safe mug. I chose my favorite ceramic soup mug!

1 egg

4 tbsp almond flour

1/2 tbsp baking powder - I make my own see below

A dash of Himalayan salt or kosher salt

1 tbsp of olive oil - I used my garlic infused greek olive oil I use Kasandrinos for the base olive oil

Optional - anything you enjoy In this case I used a Epic beef bar and chopped into pieces. Be creative use cheese, chicken, spinach anything you might be craving!


Grease your cup I used a touch of olive oil.

Add all ingredients to mug and stir with fork until well blended.

Place in microwave for 1 minute, if not done continue in 5 sec increments. In the oven fryer it took about 10 minutes on bake. When done take the cup and turn upside down and tap the bread out.

I also like to toast this bread for the crunch craving I get cut in half and throw it in the toaster! Better yet add a topping or use as sandwich!

Baking Powder recipe store in an airtight jar and use as needed

  • 1/2 cup baking soda

  • 1/2 cup organic arrowroot starch -sometimes called arrowroot powder, or arrowroot flour

  • 1 cup cream of tartar
