I bet you are always looking for a quick meal on those days you don't have time to be in the kitchen very long! I always keep fresh veggies and this meal can be made with any veggie you desire. Well here is a quick meal and you can substitute chicken for the beef.
I used the following ingredients:
6 cups of organic heirloom carrots, mushrooms, jicama, broccoli, cauliflower
2 cups grass fed beef or chicken cubed
1/4 cup coconut aminos
3 tsp of lemongrass
1 tsp minced organic garlic
2 tsp organic ginger
2-4 tbsp olive oil I used 2 tbsp of garlic infused olive oil & 2 tbsp of basil infused olive oil
Sautee the veggies and minced garlic first until leaving them crisp using tbsp of of basil infused olive oil
Sautee the beef or chicken and organic garlic using 2 tbsp of garlic infused olive oil until preferred tenderness on beef or until well done chicken
Combine both sauteed dishes and add coconut amino & lemongrass and cook for another 3-4 minutes.
Serve immediately on its own or over lightly chopped cabbage or lettuce
